さつまいもと白玉をココナッツミルクと一緒にいただく「ギナタン・ビロ・ビロ」というフィリピンのデザートと日本の「ぜんざい」をかけあわせた、とても簡単で可愛くて美味しいデザートをご紹介します。
This is a very simple, cute and delicious fusion dessert that combines a Filipino dessert “ginataang bilo bilo” and a Japanese dessert “zenzai”.

𝑭𝒐𝒓 𝒕𝒉𝒆 𝒔𝒘𝒆𝒆𝒕 𝒑𝒐𝒕𝒂𝒕𝒐 𝒃𝒓𝒂𝒊𝒔𝒆
100g Sweet potato, bite sized
1 tbsp Honey
As needed Water
𝑭𝒐𝒓 𝒕𝒉𝒆 𝒑𝒖𝒓𝒑𝒍𝒆 𝒔𝒘𝒆𝒆𝒕 𝒑𝒐𝒕𝒂𝒕𝒐 𝒓𝒊𝒄𝒆 𝒅𝒖𝒎𝒑𝒍𝒊𝒏𝒈𝒔
20g Shiratamako (Shiratama rice flour)
25g Murasakiimo-an (Sweetened purple sweet potato paste)
15g Water
𝑭𝒐𝒓 𝒕𝒉𝒆 𝒎𝒂𝒕𝒄𝒉𝒂 𝒓𝒊𝒄𝒆 𝒅𝒖𝒎𝒑𝒍𝒊𝒏𝒈𝒔
25g Shiratamako (Shiratama rice flour)
1.5g Matcha powder
10g Sugar
20g Water
𝑭𝒐𝒓 𝒕𝒉𝒆 𝒄𝒐𝒄𝒐𝒏𝒖𝒕 𝒔𝒐𝒖𝒑
150g Coconut milk
150g Milk
25g Sugar
𝑭𝒐𝒓 𝒕𝒉𝒆 𝒂𝒅𝒅𝒊𝒕𝒊𝒐𝒏𝒔
1 heaping tbsp Tapioca pearls
As you like Canned sweetened red beans
As you like Vanilla ice cream
As you like Pistachios, chopped

[𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧]
● For the sweet potato braise, put the potato and honey in a pot. Pour in water so that it covers 90% of the potato. Put the lid on and simmer the potato over a low heat for 8 min or until soft. Leave it as is until ready to use.
● Rehydrate the tapioca pearls overnight. Drain them and add to a pot of boiling water. Cook for 3 min and leave them in the water until ready to use.

[𝐌𝐞𝐭𝐡𝐨𝐝]
1. For the purple sweet potato rice dumplings, put the shiratamako and murasakiimo-an in a bowl. Add half of the water and mix well while mashing the flour grains with your fingertips to make a smooth paste. Add rest of the water gradually and sparingly so you don’t make the dough too moist and soft. The ideal condition is that the dough is moist enough that you can easily make a dent on the surface with your fingertip without making any cracks yet the dough is firm enough that the dent remains as is.
2. For the matcha rice dumplings, put the shiratamako, matcha powder sugar in another bowl, add half of the water, then do the same as before.
3. Divide each dough into 6 equal portions. Shape them into small balls and make a dent in the center with your fingertip so the dumplings will cook through faster.
4. Sink the dumplings into boiling water. Cook for 2 min after they float up to the surface. Transfer them to room temp water.
5. For the coconut soup, warm the coconut milk, milk and sugar in a pot and dissolve the sugar. Drain the dumplings, sweet potato braise and tapioca pearls before adding them to the soup. Once the soup boils, turn off the heat.
6. Serve in soup bowls and top with sweetened red beans, ice cream and a sprinkle of pistachios as you like.
